Perfect Pritchon
“Fried lechon wrapped in pita wedges and served with seven sauces…” Mmmmm. Sounds delicious, doesn’t it? Whenever we have huge company gatherings or family reunions, Charlie’s Pritchon is one of the main highlights. So how exactly does the service go?
Preparing the Pritchon for a Family Gathering
First, give them a call. Tell them when and where your gathering is. The service crew will be there about half an hour before it starts to set up.
Once there, the crew begins to carve the fried suckling pig and wrap the pritchon in pita wedges. It’s fun to watch. I also enjoy talking to the crew because they’re very friendly!
One part of the crew will continually carve the pig. The other part will help put in the sauce. Once the guests arrived, a plate full of pritchon is ready to be served. Just choose your sauce and you’re ready for a delicious experience. By the way, be prepared to provide the bowls for the sauces.
The sauces to choose from are hoisin, honey mustard, white garlic, chili, sate, honey lemon and liver (the usual sarsa, I think). Hoisin and white garlic are my favorites. You can combine the sauces if you want! Once you’ve picked out a sauce, just tell the service crew and they’ll fill the pritchon wrap with your saucy choice. Each pita-wrapped pritchon also has spring onions and cucumbers to complement the flavors.
Biting into the Pritchon is delightful. The skin is crunchy, the meat tender, the sauces fully complementing the dance of salty and sweet in your mouth. It is a great indulgence.
When the pig is carved out, the crew wraps the rest in the wedges, and then they go. I find that a lot of guests converse with them before they leave. They have a handful of business cards to give out. I’ve spotted several guests tucking the cards into their wallets. Charlie’s Pritchon really creates an impression!
Charlie’s Pritchon also serves other dishes like Pritchon Salad, Veggie Wraps, Pritchopabo, etc. I haven’t tried these other dishes as I always find myself going for the Pritchon table. :) I’m sure you understand why!

last time i ordered was way back in 2003!
If I’m not mistaken, it’s about P3,500 per order. That’s good for 20 people.
